What is Oolong tea?

Oolong tea is a type of tea that, like green tea, is made from the leaves of the Camellia sinensis plant, which is also known as the tea bush. Oolong tea is a partially oxidized (oxygenation) tea, which means it undergoes a partial fermentation process between green tea and black tea processing.

After picking, oolong tea leaves are dried and then rolled or folded repeatedly to release enzymes and promote oxidation. The oxidation process is stopped by heating the leaves before they turn black. This gives oolong tea its characteristic taste, which is often described as a blend of green and black tea with a unique, delicate aroma and taste.
